The Hospitality Institute of NSW was born out of real-world experience — not theory. Long before we were a training provider, we were venue operators. For over 30 years, our founders have owned and managed some of NSW’s most successful hospitality venues, from pubs and restaurants to function centres and bars.
Throughout those decades, one thing became clear: the success of a venue depends not just on systems or menus — but on its people. We saw first-hand the challenges of finding well-trained, compliant, job-ready staff. And we saw the opportunity to create something better.
That’s why HINSW was established — to bridge the gap between compliance training and the real needs of the industry. As a Registered Training Organisation (RTO 45218 | CRICOS 03973M), we’ve built our courses to reflect the pace, pressure, and professionalism that hospitality demands. Whether it’s an RSA, RCG, Licensee course or First Aid, every program is designed to equip learners with the skills, confidence, and certification they need to walk into a venue and contribute from day one.

Victoria Ballantyne is a seasoned hospitality leader with extensive experience across hotel management and restaurants since 2001. Starting her career as a pastry chef, she developed a deep appreciation for culinary quality and service before advancing into senior management and Licensee roles with Momento Hospitality.
Victoria excels in venue operations, liquor and gaming compliance, and team development, driven by a passion for mentoring staff and creating memorable guest experiences.

Kate Collett. With a decade of hospitality experience—from cafe beginnings and bartending at 18 to gaming and venue management—Kate knows the industry inside out.
After studying education at university, she found her calling in vocational training at HINSW. Kate loves the fast-paced energy, daily variety, and problem-solving of hospitality, but her favorite part is connecting with patrons and helping the next generation of industry leaders succeed.

Mauricio Moreno with 35 years experience in hospitality operations & vocational education, Mauricio Moreno aligns academic standards with operational excellence. As Academic Manager at the Hospitality Institute of NSW, he oversees curriculum development, compliance, and trainer support across Australia. Beyond his extensive track record in venue management and regulatory compliance, hospitality is Mauricio’s lifelong passion—rooted in a deep love for cuisine, culture, travel, and creating memorable experiences that bring people together.
